In the Vampatar 'verse, the people of the Earth Kingdom and Water Tribes are traditionally creatures of the night, while the people of the Fire Nation and Air Nomads are creatures of the day. The Air Nomads are all dead, so we don't care about them. For the Fire Nation, 'creatures of the day' includes ordinary humans, so they do not actually have any special nation-specific weird transformation. (Of course, this is the Avatar'verse, so they can still set people on fire.)
The Earth Kingdom has vampires. They're rare, but they exist. Undead, superhumanly strong, fast, and tough, and enhanced senses. They don't age, they don't suffer from disease. However, the sun has an enmity with them, so they cannot be touched by sunlight without burning, and they suffer greater damage from fire. Stakes through the heart immobilize them. Being incinerated kills them. Mistletoe burns them. They are vulnerable to holy symbols, sacred places, and priests.
The ashes/dust of a vampire need to be gathered and further disposed of, because bleeding on them will cause them to revivify. Vampires are a pain that way.
A feeding bite can be pleasurable or painful as they deem fit. Turning is an act of will and a draining of blood. It does not outwardly appear different. A newly-turned vampire takes from their death to the sunset of the next day to reanimate.
Vampires are predators. They are designed to attract humans. They also possess the ability to mesmerize humans through eye contact and voice.
They also have a strong taste for Fire Nation blood ('sunblood') over that of other people.

- assorted Dai Li (some, but not all or even most)
- Song (several years post-series)
- Shi Kai
The Water Tribe, as chosen of the moon, are werewolves. They turn into polar wolves (or if they're the Cajuns from "The Swamp", they turn into red wolves). At first, it's a largely involuntary reaction to the full moon but given training, they can transform or not-transform at will.
As werewolves, they possess enhanced senses in both forms. Human-form tends to do better with sight, wolf-form tends to do better with scent and hearing, but they're still above human-normal as humans. They are extremely difficult to kill, requiring certain sacred woods such as mistletoe, rowan, or mountain ash to dispose of them.
A waterbender cannot 'bend in wolf-form.
For the Water Tribe, lycanthropy is a family deal. The older male members of the family will turn the sons, and the older female members of the family will turn the daughters. This isn't required, but it's traditional.
Known werewolves:
- all adult Water Tribe members
- Sokka (after "Bato of the Water Tribe")
- Katara (after "The Puppetmaster")
- Hahn
- Yue
Members of other nations can be either turned by vampires or weres. It's just not part of their native culture.
The Avatar cannot be turned.
